In 1977 third generation Italian Peter Michael Palompo established fish and chip shop - PM's of St Andrews - which is now the market leader in the town.
With over 30 years experience as a master fryer Peter has seen the industry change beyond recognition. He says: 'I was the first operator to use par fried chips and my expertise was used for over 23 years to promote that. Now with advances in technology and storage I have returned to the raw product. I am proud to have been a member of the Fish Fryers Federation since 1977 and am keen for the next generation to provide top quality fish & Chips - I can already see that my daughter Emma is following in my footsteps!'

Peter has a vast wealth of experience in the catering industry having owned and managed two restaurants, a kebab shop and three fish & chip shops, throughout his career he has fried on many ranges but he admits the best has been with Florigo.
With St Andrews being famed for its golf course, increasing student population and booming tourism it is not unusual for PM's to see a 75% increase in turnover in the busiest weeks which is why the business needed a range that could cope when required.
When it came to updating his existing range there was only one manufacturer he consulted. Peter ordered a custom built four pan range with High Efficiency basket pans, a chrome plated griddle, Flotronic computer controls and mirror doors on his hot boxes.
